THE UNIQUE POINT OF DIFFERENTIATION
Not aged in oak barrels, but Fraxinus barrels
Historically, Fraxinus trees were known amongst the Germanic tribes as the "Tree of the Gods" and "spiritual center
of the world".
Fraxinus trees have been the source of natural medicines in Europe for thousands of years
The Fraxinus tree needs at least 100 years to reach maturity
Only 14 barrels were made from one single Fraxinus tree (27 meters high, 1.6 meters wide) of which Porfidio was able to acquire six barrels at auction. Hence Porfidio Fraxinus is a 'single-tree aged' distillate
The government-protected Fraxinus tree for our six barrels was planted in 1857 in the locality of Landshut, Bavaria, and harvested, under special government license, on its 150th birthday in 2007. The tree was nicknamed "Die Hunnenschlacht Esche", named after Franz Liszt's symphonic poem first performed in Weimar in the same year.
The wood was open-air-seasoned for 36 month after cutting (not kiln-dried)
The wood staves for our barrels were cut from the tree by the artisan splitting method (as opposed to sawing)
Fraxinus wood contains almost no wood tannins, contrary to oak, hence no tannin astringency in the after taste
Fraxinus wood - despite being submitted to the same toasting process as oak during the barrel manufacturing process - generally imparts almost no color to the liquid aged therein (contrary to oak)
Cold-temperature-aged in the Bavarian Alps
No Tequila® - in Mexico's history - has ever been known to have been aged in Fraxinus wood barrels
