THE HISTORY OF AGAVE IN AUSTRALIA
The agave plant originated in the Americas; and then the "Columbian Exchange"(see page 55), first spread it worldwide, starting from 1525.
Later, Queen Victoria (1837 to 1901) disseminated agave globally but above all to her imperial domains like Australia, for making ships’ ropes for Her Majesty's Royal Navy and for protective fencing for her train tracks.
After that, farmers in Australia copied it for low-cost natural hedging to ward off wild-roaming herds of hungry kangaroos and camels!
Today, over a century later, the agave has spread and proliferated in Australia beyond anyone’s expectations, to the extent that Australia registers the agave today by law as an invasive "pest"!
The state of South Australia appointed us to clear out this interloper from Crown Lands, and we accepted the duty, not least because it allows us to distill it into one of the world's most natural agave spirits.
So, we do not plant and harvest our agave plants but forage them from the wild in the Australian Outback.
Therefore, Think Auscal not Mezcal: but without the social, racial, political, narco- and environmental baggage of Mexican agave spirits.
THE RAW MATERIAL STANDARD
Agave Australis is not yet technically a botanical species.We simply invented the term to describe our own Antipodean type which just burgeoned from a century of promiscuous cross-breeding between dozens of American agave varieties in Australia. No labs, GMO technology or even farming skills here, just Darwin, nature and plant sex, nurturing a locally adapted, disease-resistant agave variety suited to South Australia’s terroir, Agave Australis – the raw material for Auscal!

Fertilizer Policy: Obviously none (It's a "pest", remember, so why fertilize it)
Pesticides Policy: Obviously none - it is officially a pest itself, so the Aussies say!
Organic status: "Naturally organic" (although it cannot be certified since it is foraged and not cultivated) GMO Status: Naturally guaranteed to be 100% non-GMO
THE AGAVE JUICE EXTRACTION STANDARD
Milling Method: Chipping mill
Extraction: Cold-pressed (to preserve the natural agave juice aroma)
Pressing Policy: Extra-virgin first-press agave juice only
Heat Policy: For full flavor our agave juice is not heated (hence non-pasteurized), unlike standard Mexican practices.
Juice Filtration Policy: All agave fiber particles are meticulously filtered out (we simply don't like the methanol, that comes from the fiber).
Animal Welfare Policy: We do not use donkeys with a Tahona millstone in Australia. We are sorry for the lack of romanticism, but this is prohibited by
Australia's strict animal welfare laws – not to mention our sense of hygiene!
                                                                                THE HYDROLYSIS STANDARD
All agave has to be processed through some form of hydrolysis to prepare the agave juice for fermentation. Hydrolysis is done either with heat, acids or enzymes.

Note: Enzymatic hydrolysis is the gentlest method of hydrolysis as the agave juice is not heated and brutally pasteurized.

Sugar Policy: No sugar added (unlike many tequilas)
Color Policy: No caramel added (again unlike many tequilas)

THE SOCIAL STANDARD
Unlike Mexico, Australia is a first-world country with fair and humane wage standards. Indeed, it has the highest minimum wage in the world. We’re happy to comply, as we support social justice and disapprove of exploitation, in particular of indigenous communities, as happens in Mexico. High minimum wages provide a buffer against the likelihood of revolution, rampant violence, corruption, and the Mexican predilection for kidnapping that we personally witnessed. That's why we like Australia!
THE ENVIRONMENTAL STANDARD
Like in most developing countries, environmental protection in Mexico is a vestigial afterthought, where corruption often negates environmental laws. In Australia, we abide by the strictly regulated and actually enforced environmental legal standards.
SUMMARY
Beyond the delicacy of its distilled wild agave, Auscal takes a stand for social justice, environmental protection, organic nutrition; and against animal cruelty, racial discrimination, social violence, narco-politics and corruption, and, generally speaking, in favor of fairness, hence Fair Dinkum.
