'A BOTANICAL TRIOLOGY' FROM MEXICO

Chocolate is produced primarily from cacao beans, which are fermented, dried, roasted, winnowed and finely ground to obtain both cacao powder (solids) and cacao butter (liquid). Cacao, also known as cocoa, is then skillfully blended with sugar and vanilla to create chocolate.
Inexpensive chocolates are blended with milk (i.e. milk powder or condensed milk) and, most ingeniously, with palm oil (instead of cacao butter), to keep the cost down.
In contrast, we, at Porfidio are, as in all culinary matters, committed die-hard purists opting to make our chocolate only with cacao powder & cacao butter (jointly 80%), agave (19%) and a hint of vanilla (1%)
Furthermore some chocolate is blended with nuts, flavors and dried fruits, not for reasons of cost but on account of subjective taste preference, which is equally none of our concern here. We at Porfidio are committed die-hard purists.
In my futile decade-long search to create Porfidio chocolate with Tequila®, I ultimately took a novel approach in 2014, which, somewhat ironically, does not include any tequila at all! Instead, we skillfully combined one of the worldʼs best, organically-grown, single-variety, single-origin Trinitario cacao beans, from the world-famous cacao Terroir of Ben-Tre in Vietnam, with natural, organically-grown vanilla beans (not vanilla extract) from Madagascar and pure crystalized blue agave juice from Tanzania. The objective was, to bring to life what is, in my opinion, an extremely delicious, authentic, pure, hand-crafted, blue agave chocolate creation (80% cacao/19% agave), designed for dark chocolate lovers.
Cacao, vanilla and blue agave originate botanically from Mexico, from where they conquered the world over the centuries, collectively constituting Mexicoʼs botanical gift to the modern world. Linguistically, the terms ʻcacaoʼ and ʻvanillaʼ also originate from Mexico (unlike ʻagaveʼ).
Pure blue agave juice, even when crystallized, offers an additional health advantage: its low glycemic index (GI). SUMMARY:
